WHAT IS CAJUN CUISINE? Gumbo, jambalaya and rice & gravy…it is the best food you will ever eat. Loosely defined, a traditional Cajun meal is usually has three elements
(1) the main dish, including special-made sausage (usually pork-based) and poultry or shrimp;
(2) steamed rice; and
(3) whatever vegetable is plentiful or available.
Of course, the “holy trinity” of seasoning is a must-have in for any Cajun chef (green bell pepper, onion, and celery.
That’s just the beginning!!! Don’t forget crawfish boils, crackins, boudin and cochon de lait (roast pork on an open fire). C’est Bon Oui!! (That’s good, yea!)
